…for barbecues, pot lucks, picnics, camping, and more! I’ve always felt that summer is definitely the season for food.
Overall I’m a stickler for homemade goodness over store-bought anything but then there’s always the juggle between making homemade tastiness and saving prep time so I can get to the eating part faster.
However, I recently found, tested and love this bbq sauce recipe and it has become the one part of food prep that I’m not going to skip or skimp on anymore. It’s just too darn tasty!
Kansas City Barbecue Sauce
(this recipe can be found at www.bhg.com or in their cookbook under Barbecue Sauce, pg. 478)
ingredients:
- 1/2 c. chopped onion
- 2 cloves garlic, minced
- 1 Tbsp olive oil
- 3/4 c. apple juice
- 1/3 c. tomato paste
- 1/4 c. cider vinegar
- 2 Tbsp packed brown sugar
- 2 Tbsp molasses
- 1 Tbsp paprika
- 1 Tbsp prepared horseradish
- 1 Tbsp Worcestershire sauce
- 1 tsp salt
- 1/2 tsp pepper
directions:
In a medium saucepan, cook onion and garlic in hot oil over medium heat until onion is tender. Stir in all remaining ingredients. Bring to boil, reduce heat to simmer. Simmer uncovered, stirring occasionally, for about 30 minutes or until sauce is desired consistency.
Makes approximately 1 1/3 c sauce.

tips:
–I buy lunch bag sized boxes of apple juice for this recipe and add the entire juice box. I adjust the remaining ingredients for that extra 1/4 c of juice.
–this barbecue sauce freezes (and thaws) well and can be kept in the fridge for up to four days.
